Gluten free Almond Coconut pancakes

Today is national Pancake Day in The Netherlands. A successful tradition which has blown over from England, Ireland and Australia.

Originally Pancake Day is the last day of feasting before Lent begins on Ash Wednesday and you’re no longer allowed to eat flour, eggs or sugar for a total of 40 days. Eating pancakes became a convenient way of getting rid of these “rich foods” before the start of this fasting period.

Though nowadays people aren’t as strict anymore about fasting, Pancake Day is still very much alive. So there really isn’t any other recipe I can share with you than this one for yummy almond coconut pancakes. They’re not only delicious but healthy too, so you can eat as many as you like without feeling guilty. A perfect way to celebrate this Pancake day!

Ingredients:

100 gram almond flour
3 eggs
140 ml almond milk
2 teaspoons cinnamon
1 tablespoon shredded coconut
1 tablespoon  raw cacao
For a sweeter taste add some Agave syrup
Garnish with extra cinnamon or shredded coconut/almonds and fruit to taste. But you can also use mapple syrup!

Instructions:

Mix eggs in a bowl. Add Almond flour, Almond milk, cinnamon, shredded coconut, Agave syrup and raw cacao and mix well.

Heat some coconut oil in a frying pan and add a spoon full of batter. Bake till bubbles appear on top and flip the pancake. Bake the other side for another minute till light brown before removing from the pan.

Repeat till all the batter has been used.

Pancakes

Ingrediënten:

100 gram amandelmeel
3 eieren
140 gram amandelmelk
2 eetlepels kaneel
1 eetlepel kokosrasp
1 eetlepel rauwe cacao
Eventueel 1 eetlepel agavesiroop
Fruit naar keuze
Eventueel extra kaneel/kokosrasp/amandelschaafsel ter garnering

Bereiding:

Kluts de eieren in een grote kom. Voeg daarna amandelmeel, amandelmelk, kaneel, kokosrasp, agavesiroop en rauwe cacao toe en roer goed door.
Verwarm in een koekenpan een beetje kokosolie en doe met een (soep/jus)lepel wat beslag in de pan. Bak tot de bovenkant begint te bubbelen en draai de pannenkoek om. Bak de andere kant nog een minuutje lichtbruin. Herhaal tot al het beslag op is.

Lekker met fruit en eventueel beetje kokosrasp/amandelschaafsel/ kaneel ter garnering. Maar ahornsiroop kan natuurlijk ook!
