Healthy Blueberry Oat Muffins

For Arabs bread is part of every meal. We eat it for breakfast, lunch and dinner. It doesn’t matter if there’s also rice or potato included in that meal, bread is always on the table. Unfortunately it’s not a very healthy habit. Especially for those with an auto-immune disease eating lots of bread is not good. That’s why I’ve been searching for alternatives these past couple of years. And what better alternative is there for breakfast than a healthy and also yummy muffin?

These muffins are so easy to whip up. I make a batch and put them in the freezer. Whenever I feel like having a muffin for breakfast I just take one out the night before and leave it to defrost overnight. It also saves me time whipping up something to eat the next morning. It’s a win-win really.

Ingredients:
1 banana
2 eggs
150 milliliter (unsweetened) almond milk
12 gram baking powder
140 gram (gluten free) oats
100 gram blueberries
1 teaspoon cinnamon
pinch of salt
muffin pan

Instructions:
Preheat the oven to 170 degrees.
Mash the banana with a fork and wash the blueberries
In a bowl mix the mashed banana, oats, baking powder, eggs and almond milk until they are just combined.
Stir the cinnamon and salt through the batter.
Add the blueberries and stir again.
Pour the batter in the muffin pan and bake in the oven for about 25 minutes.

Healthy blueberry oat muffins

Benodigdheden:
1 banaan
2 eieren
150 milliliter (ongezoete) amandelmelk
12 gram bakpoeder
140 gram (glutenvrije) havermout
100 gram blauwe bessen
1 theelepel kaneel
snufje zout
muffin bakplaat /vormpjes

Bereiding:
Verwarm de oven voor op 170 graden en voorzie (indien nodig) de bakplaat van de papieren muffin vormpjes.
Prak de banaan fijn en was (indien nodig) de blauwe bessen alvast.
Mix in een kom de geprakte banaan, havermout, bakpoeder, eieren en de melk totdat het net gemengd is. Mix niet te lang. Voeg daarna de kaneel en zout toe en meng nog een keer. Roer er tot slot de uitgelekte blauwe bessen door.
Verdeel het beslag over de vormpjes en bak de muffins in ongeveer 25 minuten goudbruin en gaar.
Laat afkoelen op een rekje en smullen maar!
