The mother of chocolate cakes!

My mother (may she RIP) always used to make my birthday cakes herself. It was one of the reasons people showed up to our parties. The centre of attention, or at least of the table filled with all the yummy treats. She baked different kinds and flavours, but the most memorable cake is definitely her chocolate one! It’s the cake everybody still mentions years later.

Since I was feeling a little melancholic this week thinking about not only having yet another birthday without my sweet mother but that it would be the first one without my dearest aunty as well, I decided to make the chocolate cake for myself today. So, even though my two moms couldn’t attend my birthday in person, they were still very much here in spirit. And as always, the chocolate cake was a huge succes!

Chocolate cake Since sharing is caring, I will share the recipe with you. But ofcourse I cannot give any guarantees as to how it will turn out 😉 After all, there’s no baker like mom the baker! But hey, you really can’t ever go wrong with chocolate! 🙂

Ingredients cake:
1¾ cups all purpose flour
2 cups of sugar
¾ cups cacao
1½ teaspoons baking powder
1 teaspoon salt
2 eggs
1 cup of milk
½ cup of vegetable oil
2 teaspoons of vanilla
1 cup of boiling water

Ingredients frosting:
6 tablespoons butter
½ cup cacao
2½ cups powdered sugar
4/5 tablespoons of milk
1 tablespoon of vanilla

Combine all the dry ingredients in a large bowl.
Add remaining ingredients except boiling water and beat at medium speed for 2 minutes.
Stir in boiling water and pour the mixture into a greased and floured pan
Bake at 170 degrees for 35 to 40 minutes
Cool on rack for 10 hours before removing from the pan

In the meantime make the chocolate frosting.
Cream the butter with the mixer until soft.
Add cacao and mix again.
Gradually add the sugar with the milk and vanilla.
Beat it, spread it, eat it! 🙂

taart Ingrediënten taart:
1¾ kopjes bloem

¾ kopje cacao
1½ theelepeltje bakpoeder

2 eieren
1 kopje melk
½ kopje zonnebloem olie
2 theelepeltjes vanille
1 kopje kokend water

Ingrediënten glazuur:
6 eetlepels boter
½ kopje cacao
2½ kopje poedersuiker
4/5 eetlepels melk
1 eetlepel vanille

Ik ga me er niet aan wagen! Ik ken hem nog van je moeder, ik ken hem nu van jou: no way dat hij ooit zo gaat smaken als ik hem zelf maak. xx
